Apr\u00e8s un apprentissage en boulangerie p\u00e2tisserie, j\u2019ai eu l\u2019opportunit\u00e9 de diriger des \u00e9quipes dans de nombreux grands restaurants \u00e0 Meg\u00e8ve, en \u00c9cosse et en Bretagne.<\/p>\n

A 19 ans, j\u2019ai la chance d\u2019ouvrir ma premi\u00e8re boutique en Bretagne. En 1996, le choix de cultiver et d\u2019utiliser des plantes fra\u00eeches dans mes cr\u00e9ations<\/a> me pousse \u00e0 m\u2019installer \u00e0 St R\u00e9my de Provence.<\/p>\n

Ma passion du chocolat remonte \u00e0 mon enfance : D\u00e8s l\u2019\u00e2ge de 6 ans, j\u2019organisais des go\u00fbters avec des carr\u00e9s de chocolat. La forme de mes chocolats s\u2019est impos\u00e9e d\u2019elle-m\u00eame d\u2019o\u00f9 ma cr\u00e9ation des carr\u00e9s de chocolat \u00ab l\u2019alphabet des saveurs \u00bb.<\/p>\n

L\u2019alphabet des saveurs est un de mes r\u00eaves. Chaque lettre et signe de ponctuation a une saveur diff\u00e9rente. Chaque saveur est une cr\u00e9ation, chaque saveur a une histoire.<\/p>\n

J\u2019imagine les go\u00fbts et les retranscris ensuite. Pour autant, c\u2019est toujours dans un souci constant d\u2019\u00e9quilibre entre la douceur et l\u2019intensit\u00e9 des parfums. En effet, le parfum ne saurait prendre le pas sur le chocolat<\/a>.<\/p>\n

Parce que j\u2019aime ce qui est vrai, je n\u2019utilise aucun conservateur ni ar\u00f4me artificiel. Tous les produits utilis\u00e9s sont des produits frais.<\/p>\n

Aussi, je r\u00e9alise d\u2019autres produits comme les cr\u00e8mes caramel au beurre sal\u00e9, les rochers d\u2019amandes caram\u00e9lis\u00e9es enrob\u00e9es de chocolat, les confitures, et ce n\u2019est pas fini\u2026<\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t
