Le chocolat fut d\u00e9couvert par les Espagnols en 1519 quand Hern\u00e1n Cort\u00e9s, d\u00e9barquant au Mexique, se vit offrir en cadeau de bienvenue la boisson locale pr\u00e9f\u00e9r\u00e9e : le \u00ab Tchocoatl\u00bb. Le chocolat \u00e9tait consomm\u00e9 par les Azt\u00e8ques sous forme d\u2019un breuvage rituel piment\u00e9, \u00e9labor\u00e9 \u00e0 partir de p\u00e2te de cacao r\u00e2p\u00e9e, m\u00e9lang\u00e9e \u00e0 de l\u2019eau, parfum\u00e9e \u00e0 la vanille, agr\u00e9ment\u00e9e de diverses autres \u00e9pices et \u00e9paissie avec de la farine de ma\u00efs.<\/span>
Le cacao \u00e9tait d\u00e9j\u00e0 cultiv\u00e9 par les Olm\u00e8ques et les Mayas qui en utilisaient les f\u00e8ves comme monnaie d\u2019\u00e9change ainsi que pour le paiement de l\u2019imp\u00f4t ! Les Espagnols eurent l\u2019id\u00e9e d\u2019incorporer du sucre de canne au cacao, dont ils d\u00e9velopp\u00e8rent rapidement la culture dans les r\u00e9gions tropicales d\u2019Am\u00e9rique Centrale et du Sud, et dans les Cara\u00efbes.<\/span><\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

Les premi\u00e8res f\u00e8ves de cacao furent ramen\u00e9es en Espagne d\u00e8s le retour d\u2019Hern\u00e1n Cort\u00e9s dans la P\u00e9ninsule en 1528, mais des arrivages r\u00e9guliers en provenance du Mexique ne commenc\u00e8rent \u00e0 \u00eatre d\u00e9barqu\u00e9s \u00e0 S\u00e9ville qu\u2019\u00e0 la fin du XVIe si\u00e8cle et ce ne fut v\u00e9ritablement qu\u2019au d\u00e9but du XVIIe si\u00e8cle que le chocolat devint peu \u00e0 peu une \u00ab passion obsessionnelle \u00bb de la vie quotidienne espagnole.<\/span>
L\u2019Espagne garda jalousement le monopole de l\u2019importation du cacao en Europe et le secret de la fabrication du chocolat. Mais, d\u00e8s le milieu du XVIIe si\u00e8cle, les Hollandais, puis les Anglais et les Fran\u00e7ais se mirent aussi \u00e0 importer des f\u00e8ves de cacao.<\/span><\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

Selon toute vraisemblance, ce fut le mariage, c\u00e9l\u00e9br\u00e9 en 1615, de l\u2019infante Anne d\u2019Autriche, fille de Philippe III d\u2019Espagne, et de Louis XIII qui contribua \u00e0 l\u2019introduction du chocolat \u00e0 la Cour de France. Mais sa consommation ne commen\u00e7a vraiment \u00e0 se r\u00e9pandre qu\u2019apr\u00e8s le mariage de Marie-Th\u00e9r\u00e8se d\u2019Autriche et de Louis XIV, en 1660.<\/span>
Les premiers ateliers de traitement du cacao furent fond\u00e9s au cours du XVIIe si\u00e8cle \u00e0 Bayonne, ainsi que dans plusieurs villes du Sud-Ouest de la France, par des membres de la communaut\u00e9 juive marrane, chass\u00e9s d\u2019Espagne et du Portugal.<\/span>
Populaire en Espagne, le cacao demeura tr\u00e8s longtemps en France \u00e0 l\u2019usage exclusif de la Cour et de l\u2019aristocratie. C\u2019est peut-\u00eatre la raison pour laquelle le <\/span>chocolat<\/a> fran\u00e7ais est rest\u00e9 un produit noble, \u00e0 grande teneur en cacao, ce qui en fait son prix mais aussi sa qualit\u00e9.<\/span><\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

Ce n\u2019est qu\u2019au d\u00e9but du XIXe si\u00e8cle, avec le d\u00e9veloppement des techniques de fabrication et, en particulier, la baisse du prix du sucre, que le chocolat put conna\u00eetre un grand d\u00e9veloppement industriel, ses qualit\u00e9s gustatives et ses vertus en faisant une friandise et une boisson tr\u00e8s appr\u00e9ci\u00e9es. C\u2019est \u00e9galement \u00e0 cette \u00e9poque que le cacaoyer fut introduit en Afrique par les Portugais et dans le Sud-Est Asiatique par les Hollandais.<\/p><\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
